The best way of fan control

My old Dell XPS-720 is not worth to upgrade anymore.
After reading about it I come up with a list of part. I will assemble it myself. Please tell me if my selection make sense and will work. I will use my new PC to game and video editing projects.
I know I can make it much cheaper but I want something future proof.
Here is my list:
Case - NZXT Phantom 820 black
Motherboard - Asus X99 Deluxe
CPU - i7 5930k
Memory - 32GB Geil (4x 8GB) DDR4 3000 MHz (Timing 15-15-15-35)
CPU cooler - Corsair H100 GTX

Storage HD - WD BLACK SERIES WD4003FZEX 4TB 7200 RPM 64MB Cache SATA 6.0Gb/s 3.5" Internal Hard Drive
Video card - EVGA GTX 780OC w/ACX cooler
Monitor - Overlord Tempest X270OC, 27" 120 Hz IPS (set to 100 Hz)

Video card and solid HD is currently in my old PC. I’am planning to get two video cards in SLI. EVGA 04G-P4-2986-KR GeForce GTX 980 4GB 256-Bit GDDR5 looks like better choice because getting second EVGA GTX 780 not going to be cheaper.

I finish my PC. Everything is working. After big discount on www.newegg.com I got GeIL 32GB (4 x 8GB) 288-Pin DDR4 SDRAM DDR4 3000 (PC4-24000) Gaming Memory Model GPR432GB3000C15QC for $679 and Asus x99 deluxe /U3.1 with Corsair H100i GTX. I order 2x COUGAR CF-V14HB Vortex Hydro-Dynamic-Bearing (Fluid) 300,000 Hours 14CM Silent Cooling Fan (Black). One will replace back NZXT fan and other will be inside behind HDD bays. So I can tilt it to blow on video card or board.
I am confused about how to control the fans. ASUS board (I have separate ASUS fan controller not installed) can do it, Corsair Link or front case fans controller. What is the best way? Case fans controller is basically manual and easy to reach. If I decide to go with case controller do I need to disable in ASUS BIOS? Corsair link control CPU or ASUS. I overclocked it a little using EZ tuning wizard.
There are too many choices. Please advice.

You can buy a fan controller separately from whatever you may have in that case.

I need to know how to make my PC working great. I do not want to buy anything just to use what I have. Corsair has some conflict with ASUS controlling CPU fan. Maybe I did not set it correctly.
My next question will be how to OC memory and processor to be stable and safe. I do not want to go extreme.

if your fans are connected to your case, they will not be affected by anything related to ASUS or BIOS since they're not even connected to the BIOS.

Open up your BIOS to overclock your memory and processor. Once you've set an overclock, you need to run stress tests on your processor to determine if it's stable or not.

I did't finish connection of every cables from my case, because i don't have free internal USB header on mother board. One use Corsair link and other I think connected to front panel. I ordered NZXT IU01 Internal USB Expansion to connect some more stuff. Fans controlled by case working but seems like I can not change their speed. When I get home I will take a look closer.
I am not overclocking expert and there are some switches on motherboard. I do not want to play with them before I know for sure what is what. I was hoping to get some hints from some users with same ASUS X99 deluxe board. Thank you for helping me.
