[SOLVED] The final build. Suggestions welcome.

So this is the second PC i've built in my life, the first was when I was 16, 10 years ago now. I've done some pretty hardcore research so I will try and explain my reasons behind each part I've chosen and then I'm open to scrutiny!

Monitor: LG27GL850 - I went with this because clearly Its a winner for price to performance for 1440p monitors, so popular I'm going to have to order mine from France.

Graphics Card: 2080 Super EVGA GeForce XC Hybrid - I chose this card because I'll need a beast and this is the best I can fit into my budget for 1440p gaming. I went with the watercooling because I was told (here actually) that keeping temps low and manual OC is a good route to take, to save spending and extra £80 on a pre-overclocked card .

Processor: AMD Ryzen 7 3700x 4.4ghz - I didn't put much thought into this, bit of a no-brainer. I originally when with the Ryzen 9 3900x but I decided to drop the price here to make more room for a better GPU.

SSD - Aorus 1TB NVMe PCI Gen4 M.2 - I chose this because the speeds it can achieve really appeal to me, I do a lot of file moving, saving and copying on my PC so this would be a breath of fresh air.

RAM - Corsair vengeance LPX 16 (8x2) 3200mhz CL16 - After much to and from with RAM I decided to go with this kit because I wanted the 'sweet spot' on speed and timings, without paying too much also. I was told this was a great kit to go with and I could manually overclock them to squeeze the extra performance I missed not going with a 3600 kit with similar / better timings.

CPU Cooler - Noctua NH-D15 140mm black - I went with an air cooler because I don't think I will be stressing my CPU too often, I wanted to save some cash over a fancy AIO which I won't even see and I've always heard good things about Noctua fans.

Motherboard - Gigabyte Aorus x570 elite - I chose this because my ignorance of motherboards is strong, this board kept popping up as compatible and reliable, I can't help but feel like there is a better model for my system but I don't have the knowledge to figure out why

Finally, its worth mentioning this system is going to be replacing my current one in an old Cosmos II supertower which has a LOT of space and a lot of fans

I got the same nvme drive and now I kinda wish I wouldve gotten the samsung 970 instead. The sustained file access is great but unless you are moving files to another PCIe 4.0 drive the sustain is lost on you. The Samsung has much better random xfer speeds with just about the same sustained speeds. PCIe 4.0 m.2s just aren’t there yet in terms of tech until the next version on Phison controller is released and implemented.

Save money on that PCIe 4 M.2 and go for a Samsung or Intel P series. The money you save you can go for faster RAM for that 3000 series Ryzen.

This would actually save you money and double your RAM to 32GB. Personally, I find most of the Aorus branded stuff way overpriced.

You don’t really need that much GPU, for the games you want at 144Hz you want the settings low anyway

A good point, I suppose I am looking for some future-proofing and the 970 1TB doesn't seem to be much cheaper for the fastest read speed sticks. At least this way if Phison does come out, new and improved in the next few years, I won't feel the need to replace my 970?

After responses from other posts regarding RAM on here, I was told that no more than 16gb is worth using anyway, 3200 is a sweet spot for price / performance and that I shouldn't go above CL16 for timings as that can impact gaming. So the RAM you are suggesting there, while it might have more capacity, is actually going to be slower?

Things are easier to see on low, less particles, effects clogging up the screen. I can overwatch on epic at get well over 100 on 1440p with a 2060S. Could easily drop a couple of settings at hit 144.

In games where it matters you don’t want everything on ultra unless you’re dumb like me and on the money demanding titles you still won’t get 144 with a 2080S, anything with RTX you can kiss goodbye to high frame rates.

Of course, I understand that I won't be able to run certain games on ultra for that 144hz, at the same time, I want to be able to be as free with my settings as possible across multiple games whilst also having a card that will hold its own for many years to come. So In my eyes it makes sense to splash out on a GPU for this rig.
