Transcoding: 6800K or 6700K w/ quicksync?

Hello all and Merry Christmas!

I have a fast question, just out of curiosity. I have 2 CPUs available and I want to perform real time transcoding/streaming with them. The 6800K has 6 cores and more L2 Cache but the 6700K has hardware accelerator (quicksync) that my application supports. I looked around the Internet and I didn't find any direct comparison apart from this that only shows that the 6700K is able to transcode 10 FHD streams at the same time with quicksync which is pretty great. My real question is: Will the 6800K be able to match or surpass the 6700K?

My server computer already runs the 6800K and because I'm lazy, I wonder if the 6700K is better in which case I will swap the motherboard/CPUs between my systems.

For streaming the 6800k will always be the better performer for quality and heavily CPU demanding games, The 6700k and its Quicksync is cool and all, but it wont have the best quality, you have to raise the bitrate to compensate.

On Ultrafast preset and recording at 1440p my CPU usage peaks to around 15% at 60fps and 100,000 bitrate. I can't stream due to crappy internet.

The default faster preset you will see 40 - 50% CPU usage on the 6800k alone on OBS, while Quicksync would fall on its face, but then again its not really worth streaming or recording to twitch/youtube anything higher than Ultrafast due to compression.

I'd personally choose the 6800k for the reason it has more cores and some games are starting to need more than a quad core i7. But the 6700k would also be a pretty decent performer for Streaming anyway, It would be one of them things where you probably should take the time to try it out, there are vary little information between these CPU's.
