I have a 560 Ti 1gb (950 core, 2150 shader, 1.087v) on a pcie 1.0 mobo and use a 1920x1080 display. Is the card enough to also run 2 1280x1024 displays? 1 on each side.

Nvidia didn't start allowing you to run more than 2 displays on a single card until the 600 series, with the exception of dual GPU cards like the GTX 590. If you want to run three monitors, you'll have to either get a second 560Ti and run them in SLI (if your motherboard supports it), or buy a new video card (any 600 series Geforce card, or any AMD Radeon Card)

what about using my 560 for two of them and then another gpu on another slot non SLI'ed. would that work?

That would work. Make sure the other GPU is Nvidia one. Any Nvidia card will work: even the weakest one. That way you can connect 2 monitors to your GTX 560 Ti and another monitor to the other card.

Though, you won't be able to play across all three screens as if it was one big screen; for that you need SLI.
