I have ubuntu gnome and for some reason it times out after 10 mins even when i do everything to prevent it

What do you mean by "times out"?

Does it come back when you press a key / move the mouse?

This is a setting for "screen timeout", probably in "Screen Saver" or something similar (don't have Gnome right now, cannot tell you the exact name)
