Under use of available CPU cores?

I've noticed hat during certain applications my CPU (AMD 8 core, Win7 64bit) is maxed on one or two cores while the others just sit idle. Is there a setting that I have wrong or is this normal? The reason I bought the 8 core CPU for this build was to prevent this from happening. I use the machine to primarily ran my DAW and do a lot of real time audio editing. Is there a fix here? Some programs are not written to use a lot of threads, unfortunately.

not all programs are designed to use a lot of cores. try running prime 95 to see if this persists.
