Upgrades to current system

Hi All

I have a few questions regarding some upgrades I intend on making to my system.

Currently (as in the sig) I have my C Drive as a 250GB SSD.
I intend on wiping my entire system and fresh installing Windows 7, to get rid of the junk that has accumulated over the past year and a half. (Stray files and my OCD do not mix well)
I have an MSI X99 Sli Plus MB, which supports M.2 at x4 speeds. I want to get an M.2 SSD - will I encounter issues installing Windows 7 to this as a boot drive? I have read numerous issues with M.2 not functioning as boot drive, but none specific to the X99 SLI PLUS.

I also intend on having 3 GPU cards in the system, the current GTX980 & GTX750 TI with the intent to buy a GTX980Ti. SLI is not my concern at all, as I am using this for Octane Render rather than gaming. I have read that having 3 GPUs in this system, as well as an M.2 should not throttle any of the speeds, (I am using the 28 lane 5820K CPU) though I may be misinformed. Can anyone confirm?

Finally, for all 3 GPU's to run I am considering a new PSU, a 1000W to replace the 750W I have, to ensure I have enough to run the system? Is this overkill? Is it even necessary? Will the current PSU I have be enough to power the system I intend on upgrading to?

Any feedback on any question would be hugely appreciated.

With a 28-lane CPU, the bandwidth is PCIe 3.0 x8 for PCIe slots #1, #3, and #5 with PCIe 3.0 x4 available on the M.2 slot. PCIe slot #6 is not usable.
