Current build:
FX 6300
RX 570 8GB
2x4 GB RAM
CX 550M
Hyper 212 EVO Cooler
Multiple HDD and SSDS

Mostly used for gaming and multitasking, some CAD every now and thenI know I'll have to swap out the mobo and the RAM too, ideally I'd be running 2x8 GB of RAM + the new mobo, as such my budget for the CPU is about 180 USD, not buying in the USA tho.

Figured I'd upgrade to a Ryzen 3 3300X but can't find a place with stock, and there's no news about when they'll get new stock. Also the R5 3600 is over 270 USD in my country... So I'm torn between buying the R3 3100 at about 150 USD or go for the R5 2600 at about 180 USD.

Which one should I go for? And any recommendation on a solid mobo? Should I wait for the restock and go for a 3300X? Help please! Thanks in advance!

Searched around and seems like the mobo is out of stock too, Is the ASRock B450 Pro4 a good alternative? Looks like it's pretty much the same.
I would go with the Max board. The max board have a larger bios chip which has enough room so it can be flashed to support the 5000 series.

Is budget a priority? I'd suggest looking at a 3600 or 3600X processor and a B550 motherboard if possible...maybe Asrock B550 Pro 4 on the 'budget' end of things. Reason being it will leave you well positioned for upgrading to Ryzen 5000 and with possibly a bit more availability right now.

A priority? No. The most tangible obstacle at the moment? Yes, I have around 400 USD. I'd love to buy a 3600 or the 3600x but they are on the 270-310 USD range, adding the B550 pro4 it's another 175USD...

As of right know I'm looking at a R5 2600 for 165 USD, B450 Pro 4 for 90USD and 2x8 Patriot Viper @ 3200 for 60 USD. All of this pretty much amounts to just the 3600x cost...

I don't think I'll be upgrading in the close future, as you can see my current CPU is 8 years old, but it's alredy showing it's age, hence the want/need for an upgrade. Should I go for the 3600 still? Thanks.
