Question Upgrading from RX 480 4GB, RX 5500 XT 8GB or RX 6600 8GB? CPU Bottleneck?

Was wondering what GPU to get for my current PC which is pretty old from around 2016 but still runs well for the games that I play.

CPU: AMD FX-8350
Motherboard: MSI Gaming 970
GPU: AMD Radeon RX 480 4GB
RAM: 4 x Samsung DDR3-1600 8GB (32GB)
PSU: EVGA 500 W1, 80+
Storage: WD Blue 1TB HDD
Case: RAIDMAX Vortex V3 ATX-403WB

I use this PC for gaming mainly. American Truck Simulator, Euro Truck Simulator 2, COD MW2, RD2, Forza Horizon 4 are the "high end" games that I would play and these all run fine at 1080p 30-60 fps in med - high settings. So I was looking to upgrade my GPU for the next year or two with preference towards AMD GPUs.

I am happy with my current PC performance but would be happier to play at ultra high settings in constant 1080p 60fps without CPU bottlenecking which these GPUs will probably put me through a bit and I'm ok with that.

Two options here are close in price that I found:
ASRock Phantom Gaming D Radeon RX 5500 XT 8G OC
ASRock Radeon RX 6600 8GB GDDR6

Ideally these two options since they have a recommended PSU of 500W and are under my $200 budget. I am open to other AMD GPU options that are perhaps more worth it. Thanks
