Currently have a GeForce 1060, with a Ryzen 7. I want to upgrade my GPU, and not sure what would be the best option. Looking to spend around $500, what could I look at? I'm interested in the 2070 Super, but not sure.

2 Sticks. 2070 Super seems like the best bang for the buck. But reading that they are overpriced, and quantity across the board is low.

Nor do I know what 2070 Super to get, reading reviews seem like a lot more break than they work.

2070 Super best bang for the buck? Among only Nvidia's cards, maybe.

I'd say go with one of the more popular brands.
Between the 2 and 3-fan models, the 3-fan model generally:
-runs just as cool, but quieter than 2-fan at lower rpms
-at the highest rpms cools better, but will be more audible, obviously
