I am wondering what would be a reliable pick of a GPU, as of now. I am also somewhat looking to "future proof" myself for maybe 3 years with this GPU upgrade.
I am having constant issues with my AMD driver for the 5700xt.
PC Specs:
CPU: i7-9700K (Turbo clock on) 3.60-4.90 GHz
GPU: PowerColor Red Devil Radeon RX 5700 XT 8GB GDDR6
PSU: Corsair RM750x 80 Plus Gold, 750 W

Hard to say what things will be like in three years. That is a decent mid-range card now.

With no budget you are clear to drop in almost anything but a 7900XT/XTX or 4090 with that PSU.

If AMD no longer appeals to you, you would have to look at 4070 and up for a decent improvement.

which is why I don't recommend Nvidia's 40 series for the low and midrange simply because the generational performance improvement is not worth the increase in MSRP. (in my opinion)

Generational over 30 series yes, but the 5000 series was more contemporary with the 20 series.

$600 is lot for a 4070 12GB, but the rough equivalent is a 3080 10/12GB / 3080Ti which are a little harder to come by. The 3080 launched at $699. Just ignore the naming scheme and look at actual performance.

Yes, they shifted the whole stack down a notch in terms of bandwidth, but it is what it is.

I agree that a 7800XT is a much better deal. Oddly the 7700XT is now the odd man out being priced way too close to the 7800XT. But the 4060 and 4060Ti are truly the worst price/performance right now.

If the A770 16GB was better than it was, I would say go that route. But I think the 5700XT beats or matches it pretty much across the board. It is pretty cheap though, so if you want to experiment...
