Usage of Win 8.1 physical copy product key

I was wondering as I am soon building my first PC, and I am confused about Windows 8.1 install. I am going to put it out there that I am not getting Windows 10 because my processor doesn't work with it. So my question is, if I buy a physical copy of Windows 8.1, can I use the product key that comes with it if I install Windows with a USB thumbdrive?
