USB headphones work without a sound card?

Somewhere along the line, you need to have a audio codec and amplifer to do the audio processing. This server mobo doesn't have audio. Thus, there are 3 options:
1. Audio card
2. External DAC/amp
3. Bluetooth usb dongle and bluetooth headset (bluetooth is a digital signal and the headset has an audio codec and amplifier to process the audio)

The Gamdias headset above does not have an inline audio codec/amp. It comes with a simple 3.5mm to usb adaptor. This doesn't do the audio processing. Thus, I don't believe it will work. Sorry, there's no under $25 option.

The motherboard is an Intel S5000PSL, and why wouldnt it work? I though USB headsets come with their own sound drivers, thats why they have the included driver CD.

I beg to disagree with you - USB headphones have their "sound-card" into the USB interface, so abovementioned headphones will work (as long as there are drivers for the OS in use).

But how does the GPU do it then???

It depends on the GPU. Some GPU's have audio and some do not. For instance, Nvidia GPUs with HD Audio have an on-board audio codec and amp. Thus, you can get audio and video thru the HDMI and displayport connectors. When connected to an HDMI TV input, you'll get both the audio an video signals. This also works with a monitor that has built-in speakers (and HDMI or displayport connectors).

I haven't seen any headsets with HDMI connectors. Consequently, you can't hook up a headset directly to the GPU. You would have to hook up a receiver with HDMI inputs. Then connect speakers or headphones to the receiver. I don't think that this is what you intend to do. Your best solutions are the 3 I stated previously.
