I have Maximus Ranger VIII (Motherboard)...
I just bought Logiteck G430 (7.1 surround ) headset which makes possible to connect them with your pc either with 3.5mm or usb (so you will be using its own sound card i guess)...
Maximus ranger VIII has onboard 7.1 sound card which claims to be very good and specialized for gaming...

SO, I would like to know some opinions whether to connect it via usb or 3.5mm in order to have the best surround sound and quality...

P.S. I am only interested using it in games.. not music, movies etc.. i have speakers for that..

If the 3.5 mm jack is utilizing the program that is meant for that headset, then yes. If not, just try both of them out and see what sounds better to you. I had a friend who firmly believed 5.1 Surround sound was better than 7.1 surround sound. It is all personal preference, but 3.5mm is going to give you better audio quality in general.
In my opinion, I have never had audio problems connecting through 3.5mm. Does the headset have any special drivers or software that it uses? If so, then it may be best to use the USB connector in order to utilize its full capabilities.

Yes it has a special programm i think (i havent connect it yet) ... But my motherboard also has a programm (realtek) that can change from stereo to 5.1 or to 7.1 or quadrophonic etc... So still i dont know what to use...

I would use the program through USB connection. Always run the native program for any sort of hardware unless otherwise specified. If you are experiencing any problems through that method let us know.

So what you are saying; I shouldn't use the usb and i should go for the 3.5mm?
