Using 2 power cable adapters...

I have a APEVIA ATX-CW500WP4 500W and a COOLER MASTER eXtreme RP-500-PCAR power supply. I just brought a GTX 960 SSC, and it needs a 8-pin.
Should I use a 2 molex -> 6-pin, 2 6-pin -> 8 pin setup with 2 adapters?
Or is that too risky and I should just buy a new PSU.

Don't use adapters.

There's a reason why only one 75-Watt 6-pin PCI Express supplementary power connector is installed on those extremely low end PSUs. Their maximum combined +12 Volt continuous current capacity is too low to handle anything more than that.

The Cooler Master eXtreme Power Plus 500 (RP-500-PCAR) can't even put out more than 360 Watts without its ripple going out of spec.

The Apevia ATX-CW500WP4 is one of those avoid at all cost products.

Stop buying trash PSUs.
