I am planning to set up a LAN in our house, but the router I am using will not be connected to the internet. Would it be possible to use the port typically reserved for the internet connection for anything else. Maybe as a fifth Ethernet port or plug a computer into it and use it as a personal server?

Solution
For 99% of consumer routers, the answer is no. There are a rare few that have a configurable WAN/LAN port but you would see that in your router manual. If you want to attach more than 4 devices with Ethernet just buy an inexpensive 4-16 port switch (depending on your needs) and attach it to one of your LAN ports to expand it.
