We've got a lecture series that runs regularly and they usually only want 10-15 minutes recorded a week. I'm looking for a solution where I can install a go-pro or some other camera in the classroom and control it remotely on my mac. Be nice to if I could somehow have that video saved to our server.

Solution
I'm not sure a Go Pro would be the best option for this scenario but an IP camera would be perfect. You could remote into into it with a open source software like iSpy (works with mac & iphone) or any other IP cam viewer software in the APP store, and record it anytime & anywhere you want, including a NAS or server.

I setup a security system for a retail clothing store that records 4 cameras 12 hours a day at 12 locations totaling 48 cameras and records everything to an iSCSI target on my NAS. Read/write speeds are amazing with an iSCSI target.

I tend to buy these IP cameras the most: (these are Ethernet but Wifi models are available)
