I was wondering if anyone had any advice on creating a network that is secure, behind a vpn router and also any problems with using multiple vpns for added security, I.e. VPN on device, behind a vpn router? Its for a university networking project and im a little new to this

It depends what you mean secure, most vpn routers are also firewalls so it is not too hard to put in traffic filters to limit what can pass between the networks.
You can to a point run vpn behind vpn but there are limitation because of how things like ipsec and pptp are implemented. You would normally have to run something like a sslvpn over ipsec. Still even a single layer of vpn causes MTU issue because of the overhead in the packerts running 2 or more just makes that issue even worse.

Ok so by secure I meant, I would close all unused ports, I would want in theory that any device on the network is behind a firewall, and uses two seperate vpns to connect to the internet.
