https://www.ekwb.com/custom-loop-configurator/shared/oW5fd1becdbbbf8

EK-Quantum Vector Trio RTX 3080/3090 D-RGB - Nickel + Plexi

Solution
So your question is will it fit or is this any good? :)

Have the EK full cover block on gpu here and very pleased. EK makes very high quality although notice some have very big dislike of them maybe price. Before I build a custom loop I look at gpu blocks and your right there isn't a big variety. Could be maybe there are just too many different layouts from AIBs to make a custom block design for each of them. Reference gpu's seem to have some offereings and some of more popular sellers. Maybe this why not see the AIO coolers for the gpu's.

I'd choose other brands such as Bykski or Barrow. they're cheaper and have excellent quality. Bykski has blocks for 3080.
btw, the link you've posted doesn't cool the gpu, it only includes cpu water block. so you're looking for this:
https://www.ekwb.com/shop/ek-quantum-vector-trio-rtx-3080-3090-d-rgb-nickel-plexi

this is the Bykski equivalent:
https://www.amazon.com/Bykski-Coverage-Water-Gaming-N-MS3080TRIO-X/dp/B08LPVP5JC

47$ cheaper.
msi Trio and Suprim 3080/3090 have all same layout and waterblocks.
