What are IOPS in an SSD?

I am planning to buy an SSD for my new build, and I have seen the term IOPS tossed around a few times. Googling it didn't give me any results that I could understand very well, so I was hoping maybe you guys could explain it to me a little better.

It tells how many things up to a certain size the drive can deal with per second.

It's good to know, but it's better to know whether the drive can keep the IOPS high when working hard. A lot of drives can only do high IOPS for a little while, but the better ones can keep it up without slowing down.
