Whats a good budget where you should go for an ssd? In my build, I skipped the HDD and went for the SSD, I will upgrade once I get enough money for it. Also, Is 128GB SSD enough or a 256 GB a sweet spot? Here is my build also if you have any problems with it.

The 128 is functional for the OS and a handful of other programs, though so many games these days have enormous footprints. So I wouldn't really recommend it unless you have a 2nd HDD installed as well for your game and mass file storage.

256 to 512 is the sweet spot depending on your budget for a solo drive. So go as high as you can up to the 512. After that you'd have to reassess your need to have so many rarely used items stored on an expensive SSD instead of a much cheap and bigger HDD.

From my experience using SSDs

60 - for just the OS and 1 or 2 main programs only.
128 - The OS and a few programs you need a 2nd drive if this is your main computer.
256 - The OS, Programs and a few games at a time. 2nd drive recommended.
512 - You can get by with just this so long as you don't try to install your entire steam library on it at once.

I honestly think the stuff I will put in my SSD is just CS:GO, Windows 10, and probably GTA V. Do you think a 128GB is enough? and if I get a 128 one, can I get a 2nd one?

Go for a 250GB.
Current prices, a Samsung 250GB is only $20 more than the 120GB. For twice the space.

I had a 120GB boot drive for a long time. OS and applications. If I had added GTA to that, it would not have fit.
That game is 40GB or larger.

On a 120GB drive, you should not go over about 90-90GB used space
Use 40GB for that game, 30GB(?) for the other game...now you're left with not enough for the OS or anything.
