Definitely gonna need a monitor upgrade if you go with the 1080ti. GPU won't have much of an effect on streaming.
With this kind of budget, no reason not to go 1080ti honestly.

Solution
Good part choices overall. For a 144hz/1080p screen, the 1080 is more than enough. You wont be needing a 1080ti per say, but if you are going to upgrade to a 1440p monitor anytime soon, then the 1080ti is not a bad idea. You can also wait for Volta 2*** series cards which are about to launch in a couple of months.
Rest of the build is pretty solid.

This is pretty overkill for a first gaming build, but it is a great build nonetheless. I'd say that if you want the maximum power out of your GPU, 1080Ti is the way to go. It handles everything all the way up to 4k/60Hz and 2k/100Hz+. The 1080(non-Ti) can still handle 2k/100Hz but it will lag a fair bit behind the 1080Ti at 4k/60Hz.

If you're willing to spend the extra money, the 1080Ti will last for a lot longer than the 1080 will, although both cards are great. There is a reason the 1080Ti is called the gaming king.

As for the rest of the build, my only issue is that you may run into some clearance issues with your RAM because the NH-D15 is so big. You'll have to see for yourself. Otherwise the components selected are very high quality.

Oh and is there any specific GPU I could look at? I know I have the MSI 1080ti on the list but if there is any particular GPU that you would recommend that would be helpful.

I think your overpaying for some of your components to start with

1. Replace your power supply with this one: https://www.newegg.com/Product/Product.aspx?Item=N82E16817139208 (Corsair TX-M 750 Watt Gold certified fully modular)

2. Take the money saved and upgrade your mechanical hard drive to a 2 TB model https://www.newegg.com/Product/Product.aspx?Item=9SIAAEE3XS9018

3. If you went with a AM4 route Ryzen 7 https://www.newegg.com/Product/Product.aspx?Item=N82E16819113429 and motherboard https://www.newegg.com/Product/Product.aspx?Item=N82E16813157757

4. With the money saved move up to 32 Gigs of DDR4 3200 RAM

ASUS Strix 1080Ti for obvious reasons: https://www.newegg.com/Product/Product.aspx?Item=N82E16814126187&cm_re=strix_1080ti-_-14-126-187-_-Product

EVGA FTW3 for solid build quality and excellent customer support: https://www.newegg.com/Product/Product.aspx?Item=N82E16814487338&cm_re=1080ti-_-14-487-338-_-Product

and Zotac Amp Extreme Edition for basically the best all-rounder 1080ti: https://www.newegg.com/Product/Product.aspx?Item=N82E16814500423&cm_re=zotac_1080ti_amp_extreme-_-14-500-423-_-Product

Any of MSI's 1080Tis are fine, including Gaming X and Duke.
