What happens if I install a Intel Core 2 Quad CPU in an older socket?

No, it won't burn your Quad core CPU. If, after installing Core 2 Quad your PC doesn't boot then maybe you require a BIOS update(search for the latest BIOS for your motherboard on the website and install it). Also, do check whether your motherboard supports that particular Core 2 Quad or not, if not, then you can't run that processor on that motherboard.
1. To properly answer your question, the make and model of the motherboard in question will be needed.
2.as other have mentions if the motherboard is a LGA775 motherboard socket then the durocore2 cpu will fit, will it run depends on the motherboard. (see 1.)

I ask this because I bought a new used office PC with Core 2 Duo and I have a spare Core 2 Quad that I could install in the new old PC but I'm afraid maybe I burned the Quad before and will damage the new old PC.

what is the make and model of the motherboard... cannot answer the question before you answer mine first.
what is the model of the cpu your talking about there are a number of Quads and core2 cpus out there not all motherboard support all version of the cpu's
