I was recently given an older 2011 Gigabyte Z68X-UD3H-B3 motherboard with a quad-core Intel Core -7-2600K CPU @ 3.40 GHz and 16 GB DDR3 memory. Will this motherboard support the latest graphics cards? I think this is a "hybrid BIOS" motherboard. The BIOS is version F12 (3/20/2012)

Solution
This is a pcie 2.0 level. So it should be able to handle up to at leat a gtx 1080, with a little hit from Pcie 2.0 and the 2600k. If you upgrade the bios and the chipset you may be able to go up to the newest gpu's, but I don't know if you want to have a gpu that costs 3 times more than your pc. According to this site you have a 9.6 chance out of 10 that it will work with the Rtx 2080ti http://www.pc-specs.com/gpu/Nvidia/20_Series/GeForce_RTX_2080_Ti/4050/Compatible_Motherboards

Most of the newer GPU's wont work on legacy Bios, Don't know about hybrid. This site has compatible builds https://www.userbenchmark.com/System/Gigabyte-GA-Z68X-UD3H-B3/500
I am using used XFX 460 GPU's on my legacy bios motherboards, other brands of the RX460 may not work, I have seen RX580 GPU's with my board on Userbenchmark but don't know what brands they were. They have a update to UEFI bios with Bios U1n, Make sure you look at the board and see if it is REV 1 or REV 1.3, For 1.3 https://www.gigabyte.com/us/Motherboard/GA-Z68X-UD3H-B3-rev-13/support#support-dl-bios

It has a bios to upgrade it to uefi, that's why I told him if he updates the bios and chipset it should work.

If your motherboard supports Windows 10 then you can run any GPU you want...the problem isn't the motherboard PCI-E slot...the problem is Win 10 drivers being available for older hardware. If the motherboard site provides Win 10 64bit drivers then you're good to go 99% of the time...if not then you'll have to buy an older GPU.
