Well if you are looking to add more ram in the future. having a larger ram chip instead of 2 small ones would make sure you have the slots avaible when that time comes.
Some people may use 2 smaller chips because their mobo doesn't support larger chips. It may be less expensive or they got screwed by a shady comptuer store that sold them a ram upgrade and are using all the slots with older smaller chips that they can't sell.
Besides being more expensive, you RAM and computer run more efficiently when you have two 4GB instead of 1 8GB. I would also recommend that your RAM is the same brand and not have one Corsair 4GB stick and one Kingston 4GB stick
Theoretically, for performance reasons, reducing bottlenecks. One stick will run single channel mode while two will be dual-channel, therefor faster. Though testing seems to indicate negligible gains, even in memory intensive tests.
