What parts for a multimedia computer?

I am looking into building my own computer. I currently have a 13" i5 MacBook Pro, but it's dying and was far too slow for my purposes to begin with.

Requirements:
I will be using this new computer for video and audio editing, image manipulation (Gimp), and moderate gaming (Minecraft w/ standard to high settings, Portal, etc). It will be at least dual boot (Windows 7 or 8, Linux, and possibly OS X). Also, I will be using two monitors.

Budget: $1000 (I'm willing to go $1500 if necessary).

Any suggestions on what kind of parts I need/what specs I should be looking for? I've heard AMD CPUs are much cheaper than Intel, but that the performance isn't as good. Would an AMD CPU work for my purposes?
