What temp should i try to keep it below

I have a i5-6600k. Just wondering what temp i should keep it below

Definetly below 100C. Normal CPU temp is around 70 degrees C, you'd want it around 50.

I have been playing for a good hour now and the max it went was 65 on 1 core. Is that bad or fine?

Thats fine, depending on your cooler. I'd not recommend stock cooler(s). They get dusty easily, they're loud and don't cool optimal.

At first, always look for compatible CPU coolers. Check the sizing, so it'll fit in your case and wont affect the RAM slots. I'd reccomend Noctua/BeQuiet/Cooler Master coolers. Sure, they're a bit expensive, but you wont have a problem with cooling.
