What's the difference between a laptop and a notebook?

There is not a difference, it is simply an interchangeable name.

The difference is the name, that is all.
Different laptops/notebooks/ultrabooks have different hardware inside that make them different from others.

That is correct. However ultrabooks are thinner, lighter and more easily portable.
