Whats the difference between these revisions 1.0, 1.1, 1.2 for the Gigabyte GA-Z97X-UD5H ?

It is a almost always a software revision. It can be hardware but most companies change the model number to distinguish that.

The differences have to probably deal with hardware compatibility. The original Z97 V1.0 may not be compatible with the G3258 processor or GTX 980's or something of that nature where the 1.2 will be more stable and out of the box. You should be able to update a 1.0 to a 1.2 if it is just software by updating the bios.

I suggest getting a hold of gigabyte directly to confirm this though to ensure it will work with your hardware.

From looking at the specs on the Gigabyte site, it looks like the only hardware change was-
"Audio Noise Guard with LED path lighting" added to the 1.1 and 1.2 versions. So, likely, as gilbadon says, it was probably software/firmware changes. Here's a thread on another site with a photo of the 'light path" on the 1.1 and 1.2, a few posts down-
