Hello guys ! I have tottaly 5 temperature sensors - 2 sensors provided from my Gigabyte Z390 Aorus Master motherboard, and 3 sensors provided by the Corsair Commander Pro controller. My I9 9900-k CPU is cooled by a Corsair H115i RGB Platinum AIO cooler.
The two sensors wich are provided with the motherboard are usefull since no fan is connectedto the motherboard headers ?
Where to install the temperature sensors and how many ? Thank you.

It's really up to you.

E.g in my Skylake build (full specs with pics in my sig), i have Thermaltake Commander F6 RGB fan controller that has 6x temp sensors. I've placed my temp sensors like so:
Probe #1: HDD (ontop of HDD)
Probe #2: PSU (ontop of PSU casing)
Probe #3: GPU (inside heatsink fins)
Probe #4: MoBo (near CPU socket)
Probe #5: ambient inside the case (near ODD bay)
Probe #6: ambient outside of the case

And my current temp readings are:
Probe #1: 26°C
Probe #2: 29°C
Probe #3: 51°C
Probe #4: 31°C
Probe #5: 26°C
Probe #6: 27°C
