I currently have an Alienware M15 R1 (laptop) with a i7 8750H CPU and RTX 2070 Max-Q which I am currently looking at upgrading to either:
i7 1195G7 or i7 11850H (Preferred)
I checked on Alienware Arena that my laptop could have its CPU changed.
I have checked bottlenecks for both CPU and GPU intense tasks (using RTX 2070 Super Max-Q as 2070 Max-q wasn't an option) with results of:

(Both with a resolution of 1920 x 1080)
Site Used: Bottleneck Calculator | PC Builds (pc-builds.com)
i7 1195G7:
General Tasks: 11.5% CPU Bottleneck
CPU Intense Tasks: 19.5% CPU Bottleneck
GPU Intense Tasks: 3.0% CPU Bottleneck

i7 11850H:
General Tasks: 0% Bottlenecks
CPU Intense Tasks: 0.2% CPU Bottleneck
GPU Intense Tasks: 4.7% GPU Bottleneck

However I couldn't find anywhere sites selling any H or G series processors although there were laptops being sold with these processors installed? Any sites selling (these) Laptop processors or ones you might recommend as alternatives to these processors that would work well?

I tend to mainly use this laptop for Gaming

You can't.

That would require a whole different motherboard. Which are very rarely (to the point of never) compatible across laptop models.

In addition to different CPU sockets (FCBGA1440 vs FCBGA1787 ), those are BGA sockets. BallGridArray. Soldered to the motherboard. Not DIY changeable.

I have checked bottlenecks
Please don't.
Those are pure garbage. No connection with any reality. Should be ignored at all costs.
