Which CPU is better?
I7-2700K VS I7-2600K?
I'd rather not overclock but I wouldn't mind bumping it up a couple mhz (not more than +0.6Ghz)

i7 2700k is better. Is price a concern here? If so, buy the i7 2600 to save few bucks since you don't want to overclock.

2700K is marginally better but there's not much in it. I'd get whichever one is cheaper.
