I'm considering GPU as prices go down:
7900 xt (£610 for xfx or £700 for nitro)
7900 xtx (£750 for xfx or asrock model)

Xtx looks tempting with current price but I'm worried as I've seen it require 3x 8 pin chargers.

My ATX need 2x 8 + 1x24
That leaves my PSU with only 2 more 8pin sockets.

Any idea how can I make this work or would I need new PSU?

I think you're confusing EPS connectors and 8pin PCIe connectors.

According to your PSU's manual, page 5,the unit comes with 2x8pin EPS connectors which can each be broken down to 4+4pins, then you have the 24pin connector for the main connector on the board, then you have 2x8(6+2)pin PCIe connectors that are standalone while a third PCIe 8pin connector/harness is in the box that is daisychained. You can still use one end of it on the GPU if you decide to go with the XTX.

different PSU brand and model but same principle/concept.

Lastly, PCIe connectors and EPS connectors are keyed/notched different so they cannot be forced in vice versa unless you strong arm them into submission.
