Should I get 16gb ddr4 or 32gb ddr4 ram?

First let me say the motherboard is older gen that doesn't work with the newest coffee lake CPU's. Are you sure you dont need a Z370? RAM is high priced of late so just a 16GB Kit as your motherboard is dual channel.

Unless you have a requirement for Video editing or rendering applications then 16GB is more than enough for AAA Gaming.
The MB you are considering supports up to DDR4 4133(OC) for 7th gen processors and up to DDR4 3600(OC) for 6th gen processors.
However you should also consider the CPU you choose and if it supports OC RAM.
It's best to choose a kit of RAM that's listed on the MB QVL at the frequency your CPU officially supports.
OC RAM requires Bios intervention for Primary Timings and Voltage with no guarantee they will work.

Yes it supports the 7700k but doesn't support of the new 6 core i7-8700K or i5-8600k. In games the i5-8600k is beating the 7700k.

Here is the 2 review benchmarks with the same hardware. One using the 8700k and the other 8600k. They are within 1~3 fps in most games. The 7700k is stuck at about 97.7fps at its best while the 8600k is miles ahead scoring over 110fps.

The i7-7700K is 7th gen and officially supports DDR4-2133/2400MHz.
What this means is that although the MB will support OC RAM it will depend on the strength of the IMC (Integrated Memory Controller) however many i7 processors scale well. The higher the OC the more strain on the IMC and XMP profiles don't work as OC RAM is not a JDEC standard.
If it's just for gaming then there is very little difference in performance using OC RAM. Unless you have Bios experience with Primary Timings and Voltage it can be a frustrating experience trying to get them to work without guarantee. The OC may be unacceptable and if not, Bios will probably default to 2400MHz. OC RAM is more expensive and so you may waste you money. Make sure you can return them if you can't achieve their rated speed.

There is an excellent Corsair kit of 16GB (4x4) CMK16GX4M4A2400C14 that have been tested and I recommend.
