I have an expertbook P2 with a new 1 TB Samsung NVME installed which runs at full speed of PCIE 3 x 4, it has 32 GB of RAM and an Intel i7 10510u . The machine also support a 2.5 SSD of additional storage. So I wonder which 2.5 SSD should I buy? So the machine is fully maxed ud?

I have considered a Samsung 860 EVO 2.5, 1 TB for additional storage (The machine only has one nvme slot). Or is there a better tradional NVME than the 860 evo?

Solution
I think you are confused with what NVME is.

NVME is an m.2 PCIE drive.
The 860 EVO is NOT an NVME drive, it is a SATA or AHCI drive.
An 860 Pro is obviously faster than 860 evo, but it's quite meaningless real world.

I would tell you to consider a drive like the 870 QVO, which is cheaper with almost the same performance.
