Which version of the GTX 1060 should I pick up?

My old GTX 660 TI is finally giving out, crashing constantly, and lagging in newer games. This cyber Monday, I wanted to pick up a 1060 to complement my i5-3750k CPU.

However, there are about 25-30 different version of this GPU, ranging from 200 to 500+. My budget is around $250 for a new card, so I wanted opinions as to what I should be looking into.

What's the difference between 3gb and 6gbs of Vram anyway?
 
The ones with 3gb have 10% less shaders making it about 10% slower. Video ram is used to store the information that is needed for the gpu to render the game. 3gb of vram is low for a new gpu to have not having enough vram can cause performance throttling and stuttering.
