I would go with a Ryzen 5 over the 7500, but I would rather have the 1600 instead of the 1500x. Here, the 1600 is only $20 more and has 2 more cores and 4 more threads.

Most importantly though, you need to get faster RAM than 2400mhz. I would go for something around 3200mhz. Ryzen uses infinity fabric and it needs very fast RAM to operate appropriately. You will see a big performance increase by the higher speed RAM and typically, there is not much, if any, price difference.
Do you have enough in budget for an Ryzen 1600? I like the 1600 over both of the other chips. I would also not go with the Antec PSU. You should buy a quality PSU as cheap PSU can damage your components. For a Rzyen build, I would go with faster ram than 2400mhz. Ryzen really uses the faster ram speeds. The boards you selected are also dual channel, therefore you need 2 ram sticks to run in dual channel. Instead of getting 1 x8gb stick, I would go for 2x4gb sticks.

If I had to choose, I would go with the first one.

I don't know about availability where you are, but I would see if something like this is in your budget.

WOW how it cost only 775$, the build that I showed you cost 1200$ (Everything is expensive in my country)

Solution
I don't see coffee lake being cheaper at all.

Build 3 with the 1500x hands down.

Also have to argue about the ram , 2400mhz is fast enough for a sub 100htz screen , stronger performance with faster ram only comes into play above the 90fps mark.
 


Agree 100%. No way coffee lake will be cheaper. It may perform better, but it will cost more.
