why am i facing bottleneck

i bought r7 265 and i3 4160 and 8gb ram . i first played at 768p games like gta v watch dogs farcry4 and the gpu usage was very low and cpu high and not getting good fps
i tried to use 1080p and the usage increased a bit but not what i should get

Ignore usage at this time unless it's at 100%. You're goal should be stable, enjoyable frames at a quality you can live with. You have entry level hardware. High settings at 1080 is out of the question. Medium settings may be possible but you're going to have to tinker with settings. Each game will have slightly different settings as each game is different.
From what I know all those games are very CPU intense. Try another less-intense game and see how things run. Also close any background programs running to free up CPU room. A lot of these games recommend things like an I5 processor so just be aware of that. The I3 is good and should be fine for many and most games.
 
I use one stick of ram : 8gb
as for farcry 4 i run it on very high on 1080p and the usage is 99%
but for gta v watch dogs even sleeping dogs does have frame drops from 60 to 30 and need for speed rivals
 
I don't think the one stick of RAM is an issue here. Dual channel while better, from what I've read, only posts a mere 5% performance increase in most applications. I doubt the Single vs Dual would be a problem here.

The real killer to me is just as turkey3 said, the CPU. WatchDogs, GTA V and Far Cry 4 all require strong CPUs. There are benchmarks showing a substantial performance difference between an i7 and i5 in WatchDogs and GTA V.

As for Youtube videos, I consider them trash. They never tell the whole story. You're welcome to post links.
