Question Why is my PC shutting down and what can I do to fix it?

I’m having PC issues and was wondering if anyone could help. I built it back at the very end of last year, and after stopping for the day, I continued on Saturday night, January 1st, and it posted. The next day, it shut off. I speculated it overheated for whatever reason and wasn’t too worried. However, this persisted, and in march, I reapplied Noctua thermal paste from Amazon as well as reoriented my aio so the tubing instead of going to the top left, went to the top right. I thought I fixed it, until days later the PC starting shutting off again. I am also getting temps in the 60 C° range on startup. Recently, while loading into a fall guys game, I see my MSI afterburner showing my CPU reaching temps of 73°. To try and diagnose the problem, I took of the side and top panels from my case to try and play with it aired out. It still overheated, and I am soon trying to play with a fan in front of my pc blowing cool air into it. Does anyone know what the problem could be?

Specs:
ASUS 3070
R7 5800X
MSI B550M
Vengeance RGB pro 32gb 3600 2x16
MSI 750W Gold PSU
Corsair crystal 280x
Corsair h100i aio (I think so, it’s the one without rgb fans) 240mm
2 intake Corsair fans

Welcome to the forums, newcomer!

Can you go into BIOS and see what BIOS version you're on at this moment of time? How is the AIO oriented in your chassis? It's mounted to the roof? If so, how are the fans oriented? Exhaust out the top or intake into the case from the top? Perhaps you left the protective peeling under the cooling block? Happens to even expert builders, not kidding! You also seem to have an inadequate PSU, try and power your build with an 850 or higher wattage, reliably built PSU.

If you have the stock cooler for the processor, see if that changes anything temps wise.
