Question Wild Speed Flux and Connection Dropping

Hi everyone, I am having an issue it feels like it is isolated to the computer because I can have my cellphone streaming Netflix or watching Twitch while for example downloading from Steam and the PC internet drops yet the cell is not impacted and remains active.
I can get 50mb/s download, its usually betweeen 35-50 yet sometimes its dropping to 3mb/s. It now frequently disconnects especially when downloading from Steam trying to get my library back on after the format.
I am running a recently formatted thus Fresh Install of Windows. Fully updated. Downloaded Intel Wi-Fi driver 20.0.1.5
I can run Ookla speed tests back to back and ranged from 60mbps to 300mbps.
Moving the adapter around changed results where it started was basically the best.
I have power cycled the modem with no difference.
Its protocol shows Wi-Fi 5 802.11ac.
There doesn't seem to be a dual option I see others with 2.4 and 5g.
Any ideas where the issue may be? the Wi-Fi 6 AX adapter? the 2.4 or 5g connection? Windows 20H2?? being near the Cyberpower APC unit? Modem? AC protocol?
I always have 4 or 5 bars signal.
