I would like to ask if I add an old HDD (just for movies etc.) to my build which is with NVME and SSD, will the PC become slower?

If it is a storage only drive that is in good working condition, no.

The normal operation of your PC should remain the same.
The HDD will be as slow as an HDD is when you use it.

Boot process may become slightly longer. But not significantly.

The HDD will perform better, than if they were using it with an OS. Using for just storage, the slowness of said drive is less dramatic. I agree normal operation, it won't affect anything, unless said drive is bad.

Only a slightly annoying delay when the drive has been idle and you go to file explorer or access something from it, then it will have to spin up. Just a brief pause though.
