Will it work?

I'm going to build this setup:

Core 2 Duo e8400
4gb or 6gb ddr2
SAPPHIRE RADEON HD 6870 1GB GDDR5
500W L-LINK

My question: Will the 500w psu be sufficient for the hd6870?

It should be fine even tho I would suggest some better PSU as your's is potentional fire hazard.
