When you install it through either a disk or a thumb drive, (USB), you should be sent to a box that asks you to enter the product key, and there should be an option there that says you don't have one. I believe it will install as normal, but it will be restricted in a sense. No personalization, constant reminders that you need a product key, etc etc.

Yes, you can. At the point where you are asked to enter the product key, check the box 'do not have product key' and continue with installation. I have reinstalled numerous times on several different PCs and have never been bothered from MS to enter key.
