I have been struggling recently with poor performance around about two or three months after upgrading to Windows 11.
I've not been able to diagnose specifically what the issue is but it seems like if I have two things running at once my PC will just freeze (usually Chrome), e.g. I will have two tabs open watching YouTube and something else, or playing a game and watching YouTube etc.

My Specs are as below
AMD Ryzen 5 3600
16 GB RAM @ 3200MHz
Rx 5700
M.2 1TB SSD (OS)

I've noticed now that I am sitting at 42% RAM usage which I can't account for in task manager, might be a memory leak? Perhaps moving back to Windows 10 could resolve?

Any help would be appreciated!

That tab in Task Manager is annoyingly misleading.

If you go to Details and right click on one of the headers, you need to enable "Working Set"

Adding the values up in this column more accurately reflects what Windows reports as system memory usage. What the Processes tab shows is the "Memory (Active private working set)" column

Also make sure in Performance -> Memory page that "Non-paged pool" is not well over 1GB.

Thank you. This does resolve the RAM utilisation, but I'm still at a loss as to why my PC is stuttering/freezing when I just have two windows of Chrome open, I feel like with my specs that shouldn't make my PC struggle.
I have looked into overheating and my temps are sitting around 40 - 50C
