Occasionally, (only about 1 in 10 boots) Windows seems to load up a little odd. The desktop icons get much larger, the Windows taskbar goes tiny and something seems a little off in the applications.

I've already tried installing and reinstalling my graphics card drivers, and here's my relevant specs:
Video Card: 2x Asus Radeon R9 270X 2GB Video Card (AMD Crossfire)
CPU: Intel Core i5-4670K 3.4GHz Quad-Core Processor
Motherboard: Asus Z87-A ATX LGA1150 Motherboard
I'm running 3 1080p monitors via eyefinity.

Try using 1 monitor for some time and see how the computer behaves.

What do you mean by "something seems a little off in the applications"?

Also check event viewer for warnings or errors.

Are you the only person using this computer? it could be that somebody else who uses the computer, is changing the display settings to his/her preferences. It is a silly statement, but the issue is quite odd and strange, and I hardly suspect this is a hardware/software.
