Hi
I'm getting a new pc for gaming.

I'm looking up keyboards and mice to buy.

Obviously wireless is less hassle than wired. But are there lag issues that need to be taken into account? Anything else? What's your experience?

Is there anything particular to look for when buying a keyboard and mouse for gaming? I'm hoping not to put that much budget into this (I'm open to ideas though).

My motherboard has bluetooth built in

I'm in love with my Logitech G700s. Lots of buttons, including four on the left side that are easily usable. Having a mouse wheel that can be pushed left/right for two more easy access buttons is also another godsend. Really helps in FPS play having every major button mapped on the mouse. [I never Quaked, so I never graduated from the arrows to WSAD. Lack of buttons is a MAJOR concern for me as a result]
I prefer wired so there's no lag, but this isn't a problem you'll particularly notice. I have a cheap Microsoft wireless keyboard and mouse (due to reach) and whilst I can see some lag, it doesn't compromise the gameplay. The most important factor is the DPI, which determines how sensitive movement and keystrokes are.

Another important factor is keyboard travel, you don't want keys that are light to the touch and offer no feedback.
