The key difference between say cat5e cable and cat3 is how the wires are twisted together. The signals don't actually know the color of the plastic. They make large ethernet cables for connecting patch panels that have 50 pairs of wires. Obviously you need many more colors patterns.

Even with normal cat5e cable you could if you wanted to say put the brown/brown-white pair on pins 1 & 2 and it would perfectly fine as long as you do both ends the same and make sure you keep the pairs on the correct pins no matter what color the plastic is.

Your largest issue is many cat3 cables the wires are not twisted at all. If none of the wires are twisted you can use any color on any pin as long as both ends are the same. If you do have pairs twisted together make sure to keep those 2 wires in the proper pins together.

Now if this will actually work is extremely hard to say. It is way out of spec but if the cable is short enough it might work. It might also only work at 100mbps but you never know it might run 1gbit.

Unless this wire is in some wall where you can't replace it I would not bother to do this. Cat3 cable was mostly used for telephone lines.
