I'm in the market to upgrade my system, Mjolnir :)
I spent $400USD for each of my ASUS STRIX 780s late 2014 on ebay. I thought a good investment for my first build. I'm looking for a solution (single or SLI/CF) that will be a sizeable increase in performance at 5760x1080p for less than $500USD.

Mjolnir Spec:
Motherboard- GA-Z97X-Gaming G1 WIFI-BK
CPU- i7 4790K
Cooler- Corsair H110
SSD- Samsung 850 Pro 128GB
HHD- WD 4TB
GPU- Asus Strix 780 6GB (SLI)
PSU- Seasonic Platinum 1000w
OS- Win7 Pro

I believe 5760x1080p FPS are similar in range by 5 - 10fps compared to 4K so that would be a guide I guess. I get 80- 100fps in skyrim 100+ mods everything maxed and 90+ in grid 2 and Project cars. Thank you!

If you currently have a GTX 780 in SLI, there is nothing in the market that i going to get you better performance for $500.

GTX 780's are great, and 2x780's are awesome. There seems to be no reason to upgrade until the next generation (Pascal) to come.

That was my mindset when I bought these cards. But I hear great things about all the new cards like 970, 980, 980ti, X, 390, 390x, Fury, etc. No card(s) new or used for $500 can outpace my setup? I say $500 because thats the most I believe I would get if I sold the 780s

I don't think you can get anything better with $500.

Perhaps a GTX 780 SLI will perform slightly better than a GTX 980 Ti and the GTX 980 Ti is more expensive than $500.
