Would this be a good build for 1440p gaming?
At face value, yes the build in your PCPP listing will get the job done. I'd add a small capacity SSD for your OS, something like a 500GB drive and have the larger drive as your game library.

Anything I should change/add/swap? Is the price okay?

Look for a board that supports PCIe 5.0 for the gpu seeing how these new AMD and Nvidia cards support PCIe 5.0. Add this fan down below to the inside of the back of that case for an exhaust fan. This MSI SSD has near identical specs as that Samsung including DRAM cache yet it's on sale atm.
