It would be an upgrade from my FX 4300, if not that one then what.

The E at the end stands for energy and its just an fx 8320 thats undervolted and underclocked for an extra price. A good upgrade would be an fx 6300 or an fx 8320/8350 ( non E ) Keep in mind that if you want to use / overclock any of these processors your gonna need a 970 or 990fx chipset motherboard and a good cooler.
One of the best motherboards for the fx 6300 would be the MSI 970 Gaming. It has SLI and Crossfire support and has a fairly low price. I wouldnt recomend it for the fx 8*** series processors but for the 6 cores its fine for overclocking.

So I could slap a regular 8320 in here if I don't plan on overclocking? Because I read that it could fry my mobo

You motherboard could fry from having these processors not even overclocked. They need so much power that i heard horror stories from friends about burnt motherboards xD
My advice is get a new motherboard if possible. The <ASRock 970 EXTREME3> is one of the cheapest motherboards that support the 8 core amd chips.
